Apple Cinnamon Galette

What says Autumn or Fall better than apple & cinnamon. These two go together beautifully!

This dessert is seriously so simple & easy, it looks rustic & like you’ve put in a lot more effort than you actually have.

Most apple pies recommend you peel the apples, however my inner dietitian says no. Firstly, because that requires more work, but mainly because there’s so much goodness in the skin-why waste it!

Apples are high in something called pectin which is good for our gut & cinnamon adds natural sweetness & may help to balance those blood sugar levels (win!)

You have to eat this served with a scoop of ice cream when it comes out of the oven. The combination of the warm galette & cold ice cream is so good.

Apple Cinnamon Galette

Ingredients

  • 2 Crisp Apples (eg. Granny Smith)
  • 2 Tbsp Brown Sugar
  • 1 tsp Ground Cinnamon
  • Squeeze Lemon Juice
  • 1 sheet Short Cut Pastry
  • 1 Egg
  • 1/2 tsp Caster Sugar

Instructions

  1. Preheat the oven to 200C (400F)
  2. Remove the core & thinly slice the apples
  3. In a bowl, combine apple, cinnamon, brown sugar, a squeeze of lemon juice and mix together so mixture is well coated
  4. Place the sheet of pastry on a tray lined with baking paper
  5. Arrange the apple in the middle of the pastry & fold the edges of the pastry in over apple (note it's not supposed to completely cover the apple). Press down on the pastry lightly.
  6. In a small bowl, beat the egg & apply over the pastry (you will have lots of egg left over). Sprinkle the sugar over the top of the pastry.
  7. Bake for 40-45 mins until pastry is golden, serve with ice cream & enjoy!

Notes:

  1. Leave the skin on the apples for extra fibre & nutrition
  2. Nutrition is for the galette only & does not include ice cream
