Zucchini Slice

This healthy zucchini slice is super easy to make and always a winner amongst the family.

It’s one of those meals you had when you were younger but haven’t had for years & when you do, you forget how good it was! This is a yummy one to enjoy with little ones, for lunches & to have either warm or cold.

This is the ultimate meal prep recipe to keep you going for a few days…honestly, so delish-you’re gonna to love it!


Why it’s good for you

To start off with it comes in at a pretty decent 16g protein-not bad for a vego dish! Protein is important for strong muscles, strengthening immune system & keeping you satisfied for longer.

2 whole zucchinis, how often do you eat that much! They’re what we refer to as a non-starchy veg, they’re loaded in nutrients & low in calories making them one that we like to fill our plates with as they won’t have an impact on the blood sugar levels.

Say cheese! What’s not to love about cheese, it’s a good source of calcium (which so many women struggle to get enough of) and protein. Just make sure you opt for the reduced fat variety, where possible.

Using wholemeal instead of white flour…you will not taste the difference-promise. Wholemeal flour is less processed and hasn’t had the nutrients stripped from the grain before grinding it down to a flour…hello B vitamins!

Notes

  1. Feel free to mix it up and use less zucchini and grate in carrot or beets-this would for a pretty cool colour too!

  2. Cut into 4 serves for larger appetites

  3. Make sure you squeeze out all the liquid from the zucchini otherwise you’ll be left with a soggy zucchini slice & nobody will want to eat that!

Zucchini Slice

Ingredients

  • 2 Zucchinis
  • 5 Eggs
  • 1 cup Wholemeal Self-raising Flour
  • 1 clove Garlic (crushed)
  • 1 Onion (finely sliced)
  • 1 cup Reduced Fat Cheese (grated)
  • 40g Danish Feta (crumbled)
  • 1/4 cup Extra Virgin Olive Oil

Instructions

  1. Preheat oven to 170C/340F. 
  2. Grate the zucchinis and squeeze excess liquid out & set aside (discard liquid)
  3. Beat eggs in a large bowl until combined, sift in flour & mix until batter is smooth
  4. Add garlic, onion, cheese, oil & zucchini, mix to combine
  5. Pour mixture into a pan lined with baking paper and bake for 30-40 mins or until golden on top & cooked through
  6. Serve with leafy salad, drizzle with balsamic glaze & enjoy
