Orange, Coconut & Apricot Granola

We all love to start our day with a bowl of granola & yoghurt. The store bought varieties tend to be high in added sugars and fats which are no good for your health. Homemade granola is exceptionally easier and better for you. This recipe has just over a teaspoon of sugar per serve, which is minimal when talking about granola!

The smell that will fill your house while the granola is baking is delightful. It’s crunchy just like granola should be and full of flavour!

Why it’s good for you

If you’ve been following me for awhile, you’ll know my obsession with oats, I’ll find a way to make it into anything. Why? because they are so good for us. I truly believe this humble grain is under valued when it comes to our health, it’s the food for the gut bacteria to help create a diverse gut microbiome which has been proven to be related to 70 different chronic disease. By other mechanism, it also helps balance & manage blood sugar levels along with reduce cholesterol levels. Like I said, it’s amazing!

Mixed nuts will help make sure you get a variety of nutrients and a variety of different plants to help feed those gut bugs (remember a more diverse gut microbiome = better health!)

Orange zest adds the most beautiful flavour and aroma without the sugar from orange juice.

Notes

  1. The granola will become crunchier as it cools

  2. You can use whatever nuts or seeds you choose (if using seeds add them when you add the coconut to the oven otherwise they will burn)

  3. You can leave the nuts whole or cut them into smaller pieces if you prefer

  4. If you don’t like dried fruit, feel free to leave it out but does add a really nice flavour & texture to the granola

  5. Swap coconut oil for a light extra virgin olive oil if you have a heart condition

Orange, Coconut & Apricot Granola

Ingredients

  • 2 Cups Rolled Oats
  • 3/4 Cup Mixed Nuts (see note 2)
  • Zest of 1 Orange
  • Pinch of Salt
  • 1 tsp Vanilla
  • 2 Tbsp Maple Syrup
  • 2 Tbsp Coconut Oil (melted)
  • 1/2 Cup Flaked Coconut
  • 1/4 Cup Dried Apricots (chopped)

Instructions

  1. Preheat oven to 150C/300F
  2. In bowl combine oats, nuts, orange zest & salt
  3. In a separate bowl mix together maple syrup, coconut oil & vanilla, then add to oat mixture & mix until completely combined
  4. Spread evenly onto a baking tray lined with baking paper & bake for 25 minutes
  5. Add coconut to the baking tray & mix through, bake for another 15 minutes (see note 1)
  6. Remove from oven, add apricots, allow to cool & enjoy!
